This madeline-shaped brownie is an amazing take on the classic chocolate brownie, with a crispy, crumbly crust and a soft luscious interior. These brownies are the perfect handheld food and go great with any ice cream or fruit jam.
Topped with a simple vanilla ice cream and chocolate strawberry, these simple desserts can be whipped up in a flash, with very little preparation time.
Recipe:
2 eggs
1/3 cup granulated sugar, sifted
1/3 cup brown sugar, sifted
1/2 cup butter, melted
1/2 cup + 1 tbsp cocoa powder (unsweetened), sifted
1 tsp vanilla extract or paste
1/4 cup flour, sifted
Pinch of salt
Preheat oven to 325ºF. Grease an 8 inch madeline tin.
In a stand mixer or mixing bowl, beat eggs until fluffy. Gradually add in both sugars.
Add in butter, flour, salt, cocoa powder, and vanilla.
Pour batter into pan and bake for 30-35 minutes until a toothpick inserted comes out clean.
Wait until brownies are completely cool, then remove from tin and serve with ice cream and a chocolate strawberry.
