Lemon-dijon vinaigrette
This vinaigrette is acidic, slightly sweet and perfect on a fruity summer salad.
Recipe:
2 tbsp dijon mustard
1/4 cup olive oil
Juice of a whole lemon
2 tsp lemon zest
Salt and pepper to taste
Chimichurri dressing
Though not traditionally on salads, I find this herby, bright sauce to be perfect as a dressing on leafy spinach and kale salads.
Recipe:
1/4 cup olive oil
1/4 cup chopped parsley
1/4 cup chopped cilantro
2 tbsp cup chopped mint
1 fresno chili or jalapeño finely chopped
2-3 cloves of garlic grated
1 tbsp red wine vinegar
2 tbsp finely chopped oregano
Traditional Balsamic Vinaigrette
3 tbsp balsamic vinegar
1/3 cup olive oil
1 spring onion, thinly sliced
Salt and pepper to taste
The best way to combine these ingredients into a dressing is to put them into a jar and shake it. The dressing does not have to be fully emulsified, it has to coat the vegetables in the salad to make them glossy.
